On average how much food waste is being separated from your general waste per week?

In our kitchens we separate around 180kg of food waste a week which goes to anaerobic digestion, composting or rendering. In the dining area we don't separate food waste as trials we've run in the past showed the customers didn't want to do so - instead food goes in with general waste which is sent to an 'energy from waste' plant and converted to electricity.
